I really like this maple rhubarb barbecue sauce on baked or grilled chicken and pork. Frozen rhubarb can be substituted for fresh.
Ingredients
1/4cuponion, finely chopped
1clovegarlic, minced
1cupfresh rhubarb, diced
2tbspwater
3tbspmaple syrup (I like Dark Robust)
1/4cupketchup
1tbspapple cider vinegar
2tbspWorcestershire sauce
1/2tspspicy brown mustard
1tspminced fresh ginger
1/2tspchili powder
1/4tspHimalayan salt
Instructions
In a small saucepan, over medium heat, melt butter, add onion, and sauté for about 1 minute, add garlic, and sauté for about 30 seconds, long enough for the garlic flavor to release. Then add rhubarb, and water, then cook at lower temperature for about 10 minutes, long enough for the rhubarb to soften.
Add remaining ingredients.
Simmer uncovered, stirring occasionally, about 10-15 minutes.
