Maple Cottage Pudding

Ingredients

  • 1 1/2 c. maple syrup
  • 3/4 c. milk
  • 2 T shortening
  • 3 T sugar
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1 egg

Instructions

  • Heat syrup to boiling in a buttered 9 inch round cake pan. Make batter with the remaining ingredients. Pour over syrup. Bake 30 minutes in a 400° oven. Remove from oven; place a plate on top, and carefully turn upside down. Garnish with whipped cream, or serve with vanilla ice-cream.
