Maple Berry Crisp

The berries from the freezer case at the Superduper are fine. But, the berries picked by scratched, sweaty, one by one hands have all the memories of last summer in the serving up now, at ten below. The heavy smell of brushing through the ferns, the big, white cat that rides along on your shoulder, the crow complaining coursely overhead, the heat of July and August... These berries have the true taste of summer, hard won, one by one. We learned to wear the half gallon milk can tied around our waist, to have two hands free to pick, or fend off the prickers! Best of all is a few children along, sure that they have found the biggest one, or screeching at that snake slithering along.

Instructions

  • Prepare the berries, any kind, by bringing them to a boil with a little water, maple syrup, and cornstarch to thicken. Pour into a baking dish and top with: 1/2 c melted butter, 1/2 c maple syrup, and 3 c rolled oats, stirred together, then bake at 350° ‘til bubbly. Serve with vanilla ice cream for supper, or in a bowl of cold milk for breakfast.
