Maple No-bake Cheesecake
I made this in no time flat for a picnic at the lake. It is delicious! I had raspberries today, but this will be on our supper table with strawberries, blackberries, or blueberries.
- 1 1/2 c. graham cracker crumbs
- 1/3 c. maple sugar
- 1/3 c. melted butter
- 2 8 oz. packages cream cheese, softened
- 1/3 c. maple sugar
- 2 tsp. lemon juice
- 2 c. heavy whipping cream
Combine the graham cracker crumbs, 1/3 c. maple sugar and melted butter and press onto bottom and sides of a baking dish. I used an 8 x 6. Refrigerate.Beat cream cheese, sugar, and lemon juice until smooth. Gradually add cream and beat until stiff and peaks form. Pile into crust, and refrigerate.When ready to serve, top with berries.
