Maple No-bake Cheesecake

I made this in no time flat for a picnic at the lake. It is delicious! I had raspberries today, but this will be on our supper table with strawberries, blackberries, or blueberries.


  • 1 1/2 c. graham cracker crumbs
  • 1/3 c. maple sugar
  • 1/3 c. melted butter
  • 2 8 oz. packages cream cheese, softened
  • 1/3 c. maple sugar
  • 2 tsp. lemon juice
  • 2 c. heavy whipping cream


  • Combine the graham cracker crumbs, 1/3 c. maple sugar and melted butter and press onto bottom and sides of a baking dish. I used an 8 x 6. Refrigerate.
    Beat cream cheese, sugar, and lemon juice until smooth. Gradually add cream and beat until stiff and peaks form. Pile into crust, and refrigerate.
    When ready to serve, top with berries.
