Maple Pumpkin Pie

Louise Silloway’s Maple Pumpkin Pie

Ingredients

For the Filling

  • 2 eggs
  • 1 can (15 oz) pumpkin Louise often prepared her own 
  • 1 cup evaporated milk
  • 1/2 cup maple syrup
  • 3/4 cup sugar
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

Instructions

Beat filling ingredients together and pour into a single pie pastry.

  • Bake for 15 minutes in a 450° oven, and then lower the temperature to 350° for 25 minutes. Pie is done when a knife inserted in the center comes out clean. Cool, and top with maple whipped cream.

Maple Whipped Cream: whip together until thickened:

  • 1 cup whipping cream
    1/4 cup pure maple syrup
