Louise Silloway’s Maple Pumpkin Pie

Ingredients

For the Filling

  • 2 eggs Louise often prepared her own 
  • 1 can (15 oz) pumpkin
  • 1 cup evaporated milk
  • 1/2 cup maple syrup
  • 3/4 cup sugar
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

Beat filling ingredients together and pour into a single pie pastry. Bake for 15 minutes in a 450 degree oven, and then lower the temperature to 350 degrees for 25 minutes. Pie is done when a knife inserted in the center comes out clean. Cool, and top with 

    Maple Whipped Cream

    • 1 cup whipping cream
    • 1/4 cup pure maple syrup

    Whip together until thickened.
