Maple Cheesecake
Ingredients
Shortbread Crust
- 1 1/2 cup flour
- 1/4 tsp salt
- 1/3 cup maple sugar
- 1/2 cup butter
Filling
- 2 large eggs, beaten
- 1 cup maple sugar
- 1 lb cream cheese
- 1 cup sour cream
- 2 T. lemon juice
Berry Topping
- 1 1/2 cup berries
- 1/2 cup water
- 1/4 cup maple sugar
Instructions
Shortbread Crust
- Stir dry ingredients together, and cut in butter until coarse crumbs form. Press into a buttered springform pan. Bake at 350 degrees 15 minutes.
Filling
- Beat ingredients together, and pour onto baked crust. Bake 60 minutes at 325 degrees. Run a knife around the outside edge, but leave the cake in the pan. Let cool on counter, then place in refrigerator. Remove from pan when completely chilled.
Berry Topping
- Bring to a simmer in a small saucepan. Thicken with ½ c. water, stirred together with 2 T. cornstarch. Bring to a boil, while stirring, cool, and pour over cheesecake.
