Baked Beans ~ Louise Silloway

I always multiply this recipe, as the beans feed a big crowd, and also freeze well. Ten pounds of dry beans fill my big turkey roaster!


  • 2 c. dark maple syrup
  • 1/2 tsp. ginger
  • 1/4 tsp. black pepper
  • 1 tsp. dry mustard
  • 2 tsp. salt


  • Soak one quart soldier beans overnight. Rinse off and add water to cover. Boil up well, until skin of bean cracks when blown on. Drain. 
    Make syrup (see ingredients above)
    Slice one onion and place in bottom of bean pot, or casserole dish. Alternate beans with syrup, then add enough water to fill pot. If desired, slice ¼ pound salt pork and place on top of beans. Cover and bake in 300 degree oven, 6 – 8 hours. Add more water is necessary to keep beans from being too dry.
