Baked Beans ~ Louise Silloway
Soak one quart soldier beans overnight. Rinse off and add water to cover. Boil up well, until skin of bean cracks when blown on. Drain. Make syrup of
2 cups dark maple syrup
½ t. ginger
¼ t. black pepper
1 t. dry mustard
2 t. salt
Slice one onion and place in bottom of bean pot, or casserole dish. Alternate beans with syrup, then add enough water to fill pot. If desired, slice ¼ pound salt pork and place on top of beans. Cover and bake in 300 degree oven, 6 – 8 hours. Add more water is necessary to keep beans from being too dry.
I always multiply this recipe, as the beans feed a big crowd, and also freeze well. Ten pounds of dry beans fill my big turkey roaster!
