Almond Cake with Maple Icing

Ingredients

  • 1/2 cup butter
  • 1/3 cup maple syrup I like dark robust
  • 1/3 cup dark rum
  • 2 eggs
  • 1/3 cup milk
  • 2/3 cup almond flour
  • 1 tsp baking powder
  • 1 cup almond nuts, coursley ground

Instructions

  • Mix in a prepared bread loaf pan, so the cake will not stick. If batter seems too runny, add a bit more almond flour.
  • Cook at 350° for 20 minutes, no longer
  • After cooling, apply the frosting: 
    3/4 cup of cream cheese
    1/3 cup of maple cream, must be at room temperature, if not warmer to combine.
