Beat filling ingredients together and pour into a single pie pastry.
Bake for 15 minutes in a 450° oven, and then lower the temperature to 350° for 25 minutes. Pie is done when a knife inserted in the center comes out clean. Cool, and top with maple whipped cream.
Maple Whipped Cream: whip together until thickened:
1 cup whipping cream1/4 cup pure maple syrup
